Since the roasted bean is increasingly used as a flavor carrier, the question arises whether you should not also cook with espresso? Cooking with coffee has long been an insider tip in gastronomy and is now also finding more and more followers in private households.

1. The spice coffee
Cooking recipes contain coffee as an exotic source of aroma with increasing frequency. But also in spice mixtures, the aroma spectrum of the brown bean enjoys increasing popularity, such as in Rubs.
A rub is a dry spice mixture with which the meat is rubbed before frying. The combination possibilities are almost unlimited, and the special flavors that can be given to the meat are further enhanced by frying or grilling.
Coffee rub for grilled steaks
Ingredients for the coffee rub (Enough for about 5-8 steaks):

- 2 tsp brown cane sugar
- 2 tsp paprika powder
- 2 tsp black pepper
- 1 tsp caraway
- 1 tsp coriander seeds
- 1 tsp cocoa, unsweetened
- 2 cloves chopped garlic
- some Worcester sauce
1. Preparation: Finely grind coffee beans, pepper, coriander seeds, and caraway in a mortar. Then mix with the other ingredients and pack airtight.
2. Use: Rub the meat with a little Worcester sauce and freshly chopped garlic, then sprinkle with the rub all around.
2. Combine flavours
A sauce with brewed coffee goes well with poultry or fish. Ground espresso is a good addition to allspice and cardamom as a fine crust for steaks. Together with cocoa powder, coffee in stews and chilies counts as an insider tip. The roasted aromas of the coffee create very special taste experiences in combination with hearty aromas. Even in purees or soups, coffee can be used with quite amazing results. One should only avoid heating the dish too much or too long, otherwise, the food may taste sour.
Pumpkin Coffee Soup
- 300 g diced Hokkaido pumpkin
- 70 g onions chopped
- 80 g carrot cubes
- 30 g butter
- 100 ml water
- 40 g ground organic coffee beans
- 1 g coffee beans ground for decoration
- 1 L vegetable broth
- 100 ml cream
- 10 g pumpkin seed oil
Sauté the onions in butter and add the carrots and ground coffee beans. Let everything simmer for about three minutes. In the meantime, cut the pumpkin into small pieces, cook, and puree it. Now you pass the coffee mixture, the onions, and carrots. Now add the mixture to the pumpkin and refine the soup with cream as desired.
Just before serving, add a dash of pumpkin seed oil to the soup. Then garnish the soup with some ground coffee and serve immediately. Ready!
3. Food pairing with coffee
In food pairing, it is important to find mutually complementary flavors. True science in itself, which even researchers are now dealing with.

Mix two tsp freshly ground coffee powder with 100 ml of warm sunflower oil and let it all steep dark and closed at room temperature for about 2 weeks. After this time, sift off the coffee powder and fill the finished oil into a bottle. simply remove the coffee powder through a sieve and pour the oil into a bottle. The result is a great coffee oil with a sweet, earthy aroma.
5. Delicious: homemade coffee syrup
The perfect topping for pancakes, desserts, or iced coffee.
The basic recipe of syrup is simple: mix liquid and sugar, add the desired flavor, and bring to a boil. Simmer until the right consistency is achieved. The more liquid is used, the longer the liquid should boil so that it thickens a little.
Ingredients for the coffee syrup
- 100 ml water
- 250 ml organic espresso
- 200 g icing sugar
Dissolve the icing sugar in a saucepan. Then pour in the organic espresso and simmer until a thick syrup is formed. This can take up to 35 minutes. Allow cooling.
Tip: Prepare double the amount and fill it hot into small bottles and seal them. So you can store the syrup in the refrigerator for 4-6 weeks.
